Method
01
Freeze the berries overnight
The night before, put half your blueberries and half your strawberries in a zip bag or container and freeze them. This is the key to a thick, scoopable base. Using ice instead produces a watery, icy result — the frozen fruit technique makes it smooth and rich like soft-serve.
02
Blend the base thick
Add the frozen berries, banana and 3 tbsp of milk to a blender. Blend until smooth, stopping and scraping down as needed. The result should be incredibly thick — so thick your blender strains a little. Add milk one tablespoon at a time only if it won't blend. A thin base makes the toppings sink.
03
Pour and shape
Spoon the blended base into a wide, shallow bowl. Use the back of the spoon to spread it and create a slight indent in the centre. This is where your toppings will nestle. The colour should be a deep purple-red.
04
Arrange the toppings with intention
Lay sliced kiwi in a fan at one side. Halve a few fresh strawberries and place them at another angle. Scatter fresh blueberries in between. There's no wrong arrangement — but working in sections by colour rather than scattering randomly looks far more beautiful.
05
Finish with seeds and eat immediately
Scatter chia seeds and pumpkin seeds across the toppings. Drizzle a little honey over the kiwi if you want sweetness. Eat right away — the frozen base will begin to melt within minutes and the bowl is best when cold and thick.
Tips for the best result
- ✦Freeze the fruit the night before — this is non-negotiable for a proper thick base.
- ✦Use the least liquid possible. A drinkable smoothie bowl defeats the purpose.
- ✦A wide, shallow bowl shows off the toppings better than a deep one.
- ✦Add the toppings right before eating — chia seeds absorb moisture quickly and lose their visual appeal.
- ✦Sunflower seeds or chopped pistachios work as alternatives to pumpkin seeds.
