Halve the cherry tomatoes and put them in a bowl. Add 2 tbsp olive oil, a generous pinch of salt, black pepper, and most of the torn basil leaves. Toss gently and leave for 10 minutes. The salt draws out juice, the oil enriches it, and the basil infuses. These 10 minutes are not optional — they're what separates bruschetta from just tomatoes on toast.

Toast the bread to charred perfection
Use a griddle pan, cast iron, or a grill — not a toaster. You want the bread deeply golden with char marks or dark edges. This crispness is structural: it's what stops the juicy tomatoes from immediately soaking through and making the whole thing collapse.

Rub with garlic while hot
The moment the bread comes off the heat, take a peeled garlic clove and rub it firmly across the surface of each slice — top side. The heat opens up the bread's surface and acts like a grater, pulling garlic flavour directly in without any cooking. By the time you taste it, the rawness is gone.

Load the tomatoes generously
Spoon the marinated tomatoes onto each toast, and make sure to include all the collected juices from the bowl — that liquid is the most flavourful part. Don't be conservative. The tomatoes should be piled, not scattered.

Drizzle balsamic glaze in thin lines across each slice — just enough for sweetness and depth, not so much it overwhelms. Scatter the remaining fresh basil, drizzle a little more olive oil, and crack over more black pepper. Eat within 2 minutes before the bread softens.
