Prep the mango & avocado
Slice the mangoes lengthways, close to the seed on each side. Score the flesh into strips and push the skin up. Halve the avocado, remove the stone, and fan the flesh into thin even slices. Do this right before serving — avocado browns fast.

Make the chili-lime dressing
Whisk olive oil, lime juice, honey, chili flakes, salt, and pepper together in a small bowl. Taste it — it should be bright and punchy with a mild heat. Add more lime if it needs lifting, more honey if too sharp.

Lay the base
Spread the arugula loosely across a wide shallow bowl or plate. Don't press it down. The peppery bitterness of arugula is the counterpoint to the mango's sweetness — it needs to stay light and airy.

Build the layers
Scatter the halved cherry tomatoes across the arugula. Then arrange the mango strips and avocado slices across the top, alternating them for colour. Keep it relaxed and natural — this isn't a restaurant plate.

Finish with the herbs
Tear the mint leaves gently and scatter them across the salad. Pile the microgreens loosely in the centre — they're not just decoration, they add a fresh grassy note that ties everything together.

Dress and serve immediately
Drizzle the dressing evenly across the salad, starting from the outside. Bring the whole plate to the table and serve at once — arugula wilts quickly once dressed, and mango at room temperature is far better than cold.
Tips for the best result
- ✦The mango must be ripe — it should give slightly when pressed and the stem end should smell intensely sweet.
- ✦Slice and plate the avocado just before serving. It browns within minutes once exposed to air.
- ✦The chili flakes are not optional — the heat against the mango's sweetness is what makes this salad.
- ✦Room-temperature mango is far better than cold. Don't refrigerate it right before using.
- ✦Add crumbled feta or toasted coconut flakes if you want more texture and substance.
- ✦This is a May–June recipe. Outside Alphonso season, it's not the same dish.
